Parsley and Potato Hash

One of the few vegetables you can count on lasting through the winter is the good old potato. It sometimes has a bad rap of being starchy, unhealthy, and boring. While it is in fact a starchy vegetable, it really isn't unhealthy and in the right dishes it is anything but boring. I just happen to have a recipe for one of those dishes right here. Try it as a breakfast or part of your lunch or dinner.

Parsley and Potato Hash

Ingredients:

Serves ~2-3 people

4 medium size Potatoes, chopped in 1/2 inch cubes

1/2 of a medium sized Onion, chopped

1 or 2 cloves Garlic, minced (your preference)

2 Green onions thinly sliced (or more if you like it)

1/2 cup Parsley chopped (It needs a lot of parsley!)

3 Eggs

1 tbsp Oil (I prefer grapeseed or sunflower seed oil)

Salt to taste

Pepper to taste

Step 1: Cooking the potato

  • Pre-heat a large frying pan with the oil on medium high heat

  • Add the onion, potato, and salt and pepper and cook for 2-3 minutes stirring occasionally

  • Add the garlic, cover, turn down the heat to medium low, and cook for approximately 6-8 minutes stirring occasionally

  • The potatoes should be mostly cooked

Step 2: Steaming the egg

  • Make sure the potatoes are covering the pan evenly, then sprinkle the green onion over the potatoes

  • On top of the green onion spread the parsley evenly, there should be a solid layer of parsley greens on top

  • Crack the eggs onto the bed of parsley and space evenly

  • Cover again and turn the heat to low, cook for 8-10 minutes until the egg yolks are just starting to harden

If you try and enjoy the above version you may want to change it up every once in a while. If you usually keep a healthy diet, you can splurge and add 1-2 slices of bacon chopped and pre-cooked in to the recipe. Just add it before you add the green onion and parsley. I know that it's not quite as healthy this way. However, if you keep the pork to a minimum, you can get a lot of flavor for only a marginal increase in fat and sodium. Just remember, eating well isn't about starving yourself from the foods you love. It's better to enjoy things like bacon occasionally to keep yourself satisfied with your diet!

My wife and I are taking a delayed honeymoon on our way back to the U.S. As much as I enjoy sharing recipes and ideas, I will not be using my vacation time to add more posts.
